I’ve read some great things about Kale lately of how healthy and benefical it is for you so I thought this twist on the traditional chicken soup would be an interesting one to try. Did you know that Kale is rich in calcium, vitamin K and C, and contains an anti-cancer property? It is said to best profit from these nutrients you should steam or stir-fry instead of boiling. For this chicken soup recipe, that also includes lentils, onions, and carrots, you may want to boil the other ingredients and throw in the kale after you steam or stir-fry it.

I want to try this recipe just because of the cute soup cup in this photo! Well also because it sounds really tasty and great for fall and winter when it gets really chilly outside. With only 170 calories and 4 grams of fat, I think this is a soup recipe I’ll be eating once a week!
